Turkey Salad Sandwich
Turkey salad sandwich
This recipe contains:
- High protein
- Minimal ingredients
Ingredients:
- 2 Turkey thighs or breast
- 1/4 cup of dried cranberries
- 1/2 of an onion
- 2 celery stalks
- 1/2- 1 cup of Greek yogurt
- Two slices of bread
- Arugula
- Olive oil
- Salt
- Pepper
Directions:
Roast turkey thighs or breast in oven for 400 degrees for 35 minutes
Allow turkey to cool for 10-15 minutes
Remove the skin off of the turkey thighs
Dice onions and celery
Heat olive oil on skillet on medium heat and saute onion and celery until golden brown for 2-4 minutes
Place onions and celery into a small bowl
Shred turkey into small thin pieces by hand (or KitchenAid) and pour into small bowl
Add Greek yogurt, dried cranberries, salt, and pepper to turkey
Toast bread
Layer all ingredients to make a sandwich
You may substitutes:
Turkey for chicken breast
Arugula for spinach
Yogurt for sour cream
Dried cranberries for raisins
You may add walnuts or grapes for some extra crunch!
